02 - 2 tablespoons coconut sugar or light brown sugar
03 - 2 teaspoons baking powder
04 - ½ teaspoon baking soda
05 - ½ teaspoon sea salt
06 - 1½ teaspoons ground turmeric
07 - ½ teaspoon ground ginger
08 - ½ teaspoon ground cinnamon
09 - ¼ teaspoon ground black pepper
10 - ¼ teaspoon ground cardamom

→ Wet Ingredients

11 - 1¼ cups unsweetened almond milk
12 - 2 large eggs
13 - ¼ cup melted coconut oil, plus extra for greasing
14 - 1 teaspoon vanilla extract
15 - Zest of 1 small orange

→ Toppings

16 - Greek yogurt or coconut yogurt
17 - Fresh berries
18 - Sliced banana
19 - Honey or maple syrup
20 - Chopped nuts or seeds

# How to make it:

01 - Preheat your waffle iron according to manufacturer's instructions and lightly grease with coconut oil.
02 - In a large mixing bowl, whisk together flour, coconut sugar, baking powder, baking soda, salt, turmeric, ginger, cinnamon, black pepper, and cardamom until evenly distributed.
03 - In a separate bowl, whisk together almond milk, eggs, melted coconut oil, vanilla extract, and orange zest until fully combined.
04 - Pour the wet mixture into the dry ingredients and stir until just combined without overmixing. The batter should be thick but pourable; add additional milk if needed to reach desired consistency.
05 - Ladle approximately ½ to ¾ cup batter into the preheated waffle iron. Cook according to manufacturer's instructions, typically 4-5 minutes, until golden and crisp on the exterior.
06 - Remove cooked waffles and place on a warm plate. Continue cooking remaining batter using the same process.
07 - Serve hot waffles topped with yogurt, fresh fruit, honey or maple syrup, and nuts or seeds as desired.

# Expert advice:

01 -
  • They taste indulgent and comforting, nothing like a typical wellness breakfast.
  • The golden color and warming spices make you feel like you're doing something good for your body while enjoying real food.
  • They freeze beautifully, so lazy mornings are still within reach.
02 -
  • Do not overmix the batter—I learned this the hard way on my first attempt, and those waffles were dense enough to use as doorstops.
  • That black pepper genuinely enhances turmeric absorption in your body, so don't skip it thinking it's just a pinch of seasoning.
03 -
  • Orange zest seems optional until you taste it—it's the difference between a good waffle and one that stays in your memory.
  • If your waffle iron runs cool, your waffles won't crisp properly; cook an extra minute or two until the steam stops escaping and they sound hollow when tapped.
