Feta & Spinach Stuffed Grilled Cheese (Printable version)

A savory twist on classic grilled cheese: thick bread filled with garlicky sautéed spinach and tangy feta, toasted to golden perfection.

# Needed ingredients:

→ Vegetables

01 - 2 cups fresh spinach, chopped
02 - 1 garlic clove, minced

→ Dairy

03 - 1/2 cup crumbled feta cheese
04 - 1/2 cup shredded mozzarella cheese
05 - 2 tablespoons unsalted butter, softened

→ Bread

06 - 4 thick slices country-style or sourdough bread

→ Seasonings

07 - 1 tablespoon olive oil
08 - 1/4 teaspoon black pepper
09 - Pinch of salt

# How to make it:

01 - Heat olive oil in a skillet over medium heat. Add minced garlic and sauté for 30 seconds until fragrant. Add chopped spinach and cook, stirring frequently, until wilted, approximately 2 minutes. Season lightly with salt and pepper. Remove from heat and allow to cool slightly.
02 - In a bowl, combine sautéed spinach with crumbled feta cheese and shredded mozzarella cheese. Mix thoroughly until well combined.
03 - Lay out all bread slices. Evenly distribute the spinach-feta mixture over two slices, then top each with a remaining bread slice to form two sandwiches.
04 - Spread softened butter evenly on the outer surfaces of both sandwiches.
05 - Heat a clean skillet or griddle over medium-low heat. Place sandwiches in the skillet and cook for 3 to 4 minutes per side, pressing lightly, until bread is golden brown and cheese is fully melted.
06 - Remove sandwiches from heat and let rest for 1 minute. Slice diagonally and serve warm.

# Expert advice:

01 -
  • The feta brings this salty brightness that balances perfectly with the mild mozzarella, creating layers of flavor regular grilled cheese just cant match
  • Its the kind of comfort food that feels fancy enough for guests but comes together in under 20 minutes on a weeknight
02 -
  • Medium-low heat is your best friend here, I learned the hard way that high heat burns the bread before the filling has time to get all melty and wonderful
  • Squeeze excess moisture from your spinach after wilting, otherwise you'll end up with soggy bread and a disappointed sandwich experience
03 -
  • Grate your own mozzarella if you can, pre-shredded cheese has anti-caking agents that prevent it from melting as smoothly
  • Use a knife to spread your softened butter rather than trying to melt it directly on the bread, you'll get much more even coverage that way
