Fresh Strawberry Bruschetta Balsamic (Printable version)

Bright strawberries with mint and balsamic atop toasted baguette for a light, flavorful bite.

# Needed ingredients:

→ Bruschetta Base

01 - 1 French baguette, sliced into 8 pieces
02 - 1 tablespoon olive oil
03 - 1 clove garlic, peeled

→ Strawberry Topping

04 - 1.5 cups fresh strawberries, hulled and diced
05 - 2 tablespoons fresh mint leaves, finely chopped
06 - 1 tablespoon honey or maple syrup
07 - 1 teaspoon lemon zest
08 - Pinch of sea salt
09 - Freshly ground black pepper to taste

→ Balsamic Reduction

10 - 0.25 cup balsamic vinegar
11 - 1 teaspoon sugar, optional

# How to make it:

01 - Preheat oven to 400°F. Arrange baguette slices on a baking sheet and brush both sides lightly with olive oil. Toast for 4-5 minutes, flipping once, until golden and crisp.
02 - Remove baguette slices from oven and rub one side of each slice with the garlic clove while still warm.
03 - In a mixing bowl, combine diced strawberries, fresh mint, honey or maple syrup, lemon zest, sea salt, and black pepper. Toss gently until well combined.
04 - Pour balsamic vinegar and optional sugar into a small saucepan. Bring to a simmer over medium heat and cook for 3-5 minutes until thickened and syrupy. Allow to cool slightly.
05 - Spoon generous amounts of the strawberry mixture onto each toasted baguette slice.
06 - Drizzle balsamic reduction over each bruschetta. Serve immediately.

# Expert advice:

01 -
  • It comes together in under twenty minutes, which means you can actually make it on a weeknight instead of ordering takeout.
  • The contrast between warm toasted bread and cold, juicy strawberries feels fancy but tastes like pure summer simplicity.
02 -
  • Don't assemble these more than five minutes before serving, or the toast will soften and lose its snap—timing matters more than perfection here.
  • If your balsamic reduction becomes too thick, a tiny splash of warm water will loosen it back up without ruining the flavor.
03 -
  • Make your balsamic reduction ahead of time; it keeps in the fridge for weeks and makes assembly time almost zero.
  • If strawberries aren't at their sweetest, add an extra half teaspoon of honey and a tiny squeeze of fresh lemon juice to wake them up.
