12 - 2 tablespoons olive oil
13 - 1/2 teaspoon sea salt
14 - 1/4 teaspoon black pepper
15 - 1/2 teaspoon smoked paprika, optional

# How to make it:

01 - Set oven to 425°F and line a baking sheet with parchment paper.
02 - In a small bowl, combine softened butter, parsley, dill, chives, minced garlic, lemon zest, salt, and black pepper. Mix until well blended and set aside.
03 - Place cauliflower florets on the prepared baking sheet. Drizzle with olive oil, sprinkle with salt, pepper, and smoked paprika if using. Toss to coat evenly and spread in a single layer.
04 - Roast cauliflower in the oven for 25 minutes, flipping halfway through, until golden and tender.
05 - Pat salmon fillets dry with paper towels. Place them skin-side down in a separate baking dish lined with parchment paper.
06 - Spread approximately 1 tablespoon of the herb butter over the top of each salmon fillet.
07 - During the last 12 minutes of cauliflower roasting, place the salmon in the oven. Bake for 10 to 12 minutes, or until salmon flakes easily with a fork.
08 - Transfer salmon to serving plates, garnish with extra fresh herbs and lemon wedges, and serve alongside roasted cauliflower.

# Expert advice:

01 -
  • Takes barely 40 minutes from stove to table, perfect for nights when you're hungry but not in the mood to fuss.
  • The herb butter makes salmon taste like you've spent hours perfecting it, when really you just chopped some herbs and let butter do the heavy lifting.
  • Naturally keto-friendly with zero guilt, packed with omega-3s and roasted vegetables that actually taste good.
02 -
  • Don't skip patting the salmon dry—I learned this the hard way when I rushed and ended up with steamed salmon instead of nicely cooked, and it changed everything once I started taking that step seriously.
  • The herb butter can be made ahead and refrigerated for up to three days, which means you can have fancy dinner on actual busy nights by doing the work when you feel like thinking.
03 -
  • Room-temperature butter is the difference between herb butter that's silky and smooth versus butter that stays chunky and won't coat the salmon properly.
  • If your salmon is particularly thick, you can tent it loosely with foil for the first few minutes of cooking to prevent the exterior from overdrying while the center comes up to temperature.
